Overview

In this course the focus is building heavily on the fundamentals of all brewing (espresso, pour over and batch brew). The aim is that students will learn all the elements that impact coffee  when brewing and how to use different techniques to ether work around problems (bad water or equipment) or how to make sure everything is working to its best.

Topics covered

Theoretical

  • What is happening when we add water to coffee. The science of extraction.

  • Basics that impact an extraction. How we use equipment correctly.

  • Water and filters. Learning why water can ruin the flavour of a coffee.

  • Pouring techniques and what they can do.

  • How different beans and roasts need to be approached for best brewing results.

Practical

  • Basics of brewing. Learning how to get the best extraction quickly.

  • Understanding how grinders impact flavour.

  • Water and its impact on flavour.

  • How to pour - different techniques of pouring and how much they can change the flavour of the brew.

  • How to get the best from an espresso machine using brewing techniques.

  • Learning how to brew different roasted coffees.

  • How to brew different origins and density coffees.
