Overview

This course is designed to help you understand all the coffee market; how to talk and work with importers, how to work at origin, the correct process for importing and assessing green coffee and what to do if something goes wrong somewhere in that chain. 

  • we cover the coffee stock market but only in relevance to global pricing and how it affects the prices you deal with.

Topics covered

Theoretical

  • Green Grading: knowing what it means and how to evaluate it.

  • Physical analysis of green coffee: is your specialty coffee really specialty?

  • Learning the international rules of coffee trading and the different standards.

  • How to work with farmers: direct or not direct - learn the safest ways to source your own coffee.

  • Understanding what to avoid and what to seek when sourcing coffee.

  • different cupping analysis methods and which ones to use for which purpose (SCA, COE or your own).

Practical

  • Green Grading: physical evaluation of screen sizes, moisture content, defects and more.

  • Cupping problematic coffees - old, unstable, defective and more.

  • Understanding how to cup hundreds of samples and find what you need (origin style cupping).

  • Sample roasting training and protocols (how to roast without software and on unknown sample roasters).
