Overview

This course is designed to help you understand all the way in which you can control your roasts with a focus on outcome. The course is focused on how to get the best flavours from your coffees using drums speed, airflow and the roasters thermodynamics. 

The course is very practical with a focus on roasting, tasting and discussing. The main aim is that the students leave with a lot of knowledge and understanding that can be easily used in real world situations. 

Topics covered: 

Theoretical: 

  • How does a roaster work (complex analysis of heat transfer in a roaster).

  • What are we really doing when we roast (a look at bean structure and what happens during the roasting process).

  • How to roast on every machine (understanding what we are really controlling and how we can transfer a profile from one machine to another).

Practical: 

  • Learning to adapt quickly to a roaster (minimising wasted roasts).

  • Modulation time and end temperature (what can we achieve only using the basics).

  • How airflow really works and affects flavours.

  • Drum speed, how it really is the most underused and most important tool for roasting great coffee.

  • Cuppings of all roasts and learning how do identify roast defects
