SCA Roasting Courses

 
 
 

Foundation

{1 Day}

This course gives the learner an understanding of the roasting process, including the physical changes that take place during the process, and how to control sensory aspects of the coffee by roasting light or dark. Learners will also gain an understanding of the basic structure of the roasting machine, and general maintenance and fire prevention and will get hands-on roasting experience controlling major parameters and analyse results.

Intermediate

{ 2 Days }

This course requires a learner to have at least foundation level in Sensory and Green Coffee to be able to incorporate and deepen the Roasting skills. This level will provide a more detailed understanding of the roasting process and the different kinds of heat transfer. You will learn to create a roast profile operating temperature, time and other parameters and analyse results from multiple perspective including sensory.

Professional

This course is building advanced skills in profile development and sensory evaluation of different roast profiles, therefore it requires student to have at least intermediate skills in Sensory. Course will provide knowledge of the fundamental chemistry of coffee, as well as the chemical reactions happening during coffee roasting. Included topics are roastery management, principles of manufacturing efficiency and capital expenditure.

SCA Green Coffee Courses

This introduction course is designed to give basic concepts regarding the consuming side of green coffee. Participants will learn about the specialty coffee supply chain from seed to cup, including cultivation, harvesting, processing, drying, shipping, storage, and delivery. We will also briefly explore the principles of coffee growing, processing, grading, trade and portfolio management, Ethics in supply chain.

This course is designed to build on the knowledge gained in the Green Coffee Foundation course and prepare the student for more complex job functions found in working with green coffee We will dive into botany and agronomy, coffee processing, defects, core elements of green coffee contracts, green grading and quality differentiation, seasonality, market terminology, decaffeination, mechanisms of certification and more.

This course is designed to prepare the students for decision making in green coffee management. You will improve your skills in identifying key aspects of coffee botany and farm management, understand processing methodologies, identify cup defects, analyze samples for quality, understand criteria forming the cost of green coffee and how to assess suppliers. Learn major aspects of green buying and ethical sourcing.

This course explores the essentials of sensory evaluation in a practical and interactive manner. It investigates the way we perceive what we taste and how to apply this knowledge when evaluating coffee’s natural characteristics. After that course you will be able to identifying specialty coffee qualities, identify basic tastes and aromatic compounds groups, set up coffee tasting using Cupping protocol and apply that in your daily work.

This course aims to align the student with industry coffee and sensory standards, to acquire the skills required to start identifying and evaluating qualities in specialty coffee, and to accurately measure and describe coffee beverage characteristics. You will build a sensory vocabulary to clearly describe coffee to others using the SCA Sensory Lexicon and other methods.

This professional advanced level course is aimed to deepen your Sensory abilities and help build a professional approach into coffee sensory evaluation. Students will learn to generate repeatable and methodical sensory measurements of coffee, build Quality Control process.
